Do we have a national American cuisine? What are we famous for in upscale food? Sure we eat Hot dogs, Apple Pie...but what about food that is served all over the world in upscale restaurants? Is there really a category for American Food...if so, what is it, and why do you think it is?

Answer:
i live in new orleans and we have our own style of food

it is a mix of french influence, black african slave influence, some spanish influence, and an influence of the swamps and those people known as acadians who live there

the food is "creole", not cajun as many people think

cajun is far spicier whereas creole retains some of the spice but is know more for its rich sauces and blending of spices

we have gumbo heavily influenced by former slaves

jambalaya, heavily influenced by the cajuns

menuiere sauce a gift from the french

etouffee which is kind of like french sauce that is served over rice with the addition of seafood

and then we retain some influence of other southern cooking in dishes like collard greens, fried catfish, and the like

come to new orleans we need your tourist dollars!
