If you say the Big Texan, you don't know good food. It doesn't have to be a big restaurant or a fancy restaurant. BBQ would be fine too. I am going over the weekend and I haven't been in years.
Answer:
My personal favorite is Ruby Tequila's. They are on Paramount and have a newer location out on Soncy. Don't skip dessert! Try the Chocolate Chimichanga! It's a Hershey Bar wrapped in a pastry like a burrito, fried, and topped with caramel, chocolate sauce, and whipped cream.
Abuelo's is good, too, but a little classier atmosphere.
BBQ: depends on your tastes. Cattle Call has a sweeter sauce whereas Dyer's has a more tangy, spicy taste. A lot of people like Desperado's, which is owned by a Dyer who split from the original family restaurant. I believe there is a bit of a feud going on there...
The best steaks are at places that have odd hours. David's is an awesome little place, and last year I discovered Outlaw's Supper Club. You can't find it unless you are looking for it. It's out by the airport, but it's worth it. The exterior looks a little rough (if I remember correctly, there is a big lighted arrow sign that says BEER), but the steaks are awesome! Well worth it, but probably not the most family-friendly place. Call ahead for their hours. I don't remember them off them top of my head. Both of these places won Amarillo's "Best Kept Secret" award by the Globe News. David's got 1st place, Outlaw's 2nd.
I love Kabuki Japanese Steakhouse. One of those "cook right at the table" places. There's also Sakura, but I prefer Kabuki myself.
And don't forget to pick up donuts from the Donut Stop in the morning! My fave: blueberry cake donuts washed down with chocolate milk. Mmmmmm....

It won "Best Famous Restaurant", but come on; how many "famous" restaurants are there in Amarillo?
My main advice is to stay clear of most national chains. Not that there is anything wrong with them, but there are too many local flavors to pass up on a short visit!
