Answer:
Dress very nicely, greet the people with a smile and always be professional in your job..If possible, try to remember regular customer's names. It makes them feel important when you greet them by name whenever they come. Then tell them whatever the establishment requires such as: "Welcome to ___" and then ask them if they have a reservation (if so ask their name and number of people in their party, and if not, tell them how long their wait will be). Always be polite, a diplomat and an advocate for the restaurant when people get impatient or rude, while the whole time keeping in mind that the "Customer is always right". Make the effort to learn as much as possible about the menu and be able to answer any questions the waiters may have to know. Sometimes the customers might ask a lot of questions while waiting for a table. If you are able to answer them, then that helps establish the "first impression" they will have of the restaurant which will contribute to their decision to patronize the restaurant again. Sometimes in really nice restaurants, if the customer is impressed with the host, they may give him or her a tip. Another thing you can do is, ask the customer if they would like a glass of wine while waiting for a table. This makes a long wait more pleasant, but be sure that they pay either on the spot or put it on a separate ticket and give it to their server when you seat them.(You don't want to end up having to pay for it.) If you are working in a small restaurant where seating is not determined electronically, then you as the hostess will probably be responsible for deciding where the customers sit, so if seating is limited, first check the reservation list before you start and decide right away which tables will be needed for which reservation with at least an hour and a half between seatings on that same table for dinner, and 45 minutes for lunch. Make a diagram to keep track so you never have to be embarrassed because you gave away someone else's table and they have to wait even though they made a reservation. And do not chew gum, eat or drink in front of the customers. It will turn them off to you and the restaurant. Do not stand around gabbing with friends or other employees where the customers can hear, especially personal stuff. Do not talk about yourself or your personal problems, unless the customers ask specific questions and then only answer those questions. Remember they came out to spend money to relax and have pleasant time and do not need to hear the employee's problems. Be ever vigilant of your post so that the customers never have to wait so long without attention that they decide to leave and go somewhere else. So if you have to go to the bathroom, ask someone else to watch the door for you and tell the "The hostess will be with you shortly." This always keeps the customer from thinking no one cares. There is a lot more to it but it is just common sense, and the rest you will learn soon enough. With these guidelines you can hostess in the best places. Good luck.
