I assume you both are locals? Casinos dates are good because you can make the date as short or as long as you want (or can lol) but, you might be broke after the first date.
Try Yakiniku or korean BBQ it fun and the food being cooked will provide tons of icebreakers for you if you get stuck finding things to talk about like a cadence in classical music.
Brazillian BBQ is good to and lots of fun they cut many types of meats and seafood right into your plate. Samba in the Mirage is cool and they have the revolution bar right there for after drinks. Yolis on paradise road next to Ruth Chris steak house is Brazillian BBQ to served the same way.

depends on where you live and how old you are--neither is metioned.
in general i think a simple dinner is a good option. that way if things are going well you can suggest going for drinks or a stroll afterwards, if not, you can end the date there.
