Okay I like my eggs sunny-side up, which means fried with the whites cooked firm and the yolk runny in the center. Anyways almost everytime I go into a breakfast reasturant and order eggs I'm told that the cook will make my eggs but I must be informed that "your eggs will be either undercooked or burnt". when I ask why I must eat either raw or eggs a little disk of pure carbon I'm told that there is no way to cook eggs sunny side up with out either cooking the yolks and burning the whites or leaving the whites undercooked so that my yolks might remain runny.
The thing is that I know eggs can be cooked sunny side up with yolks runny and whites firm, I make them that way myself every time I cook a standard american breakfast In point of fact I just made them that way tonight.
Once again I ask why can't restaurants cook eggs?

Difference is you cook them at home in a small skillet and you control the heat.
A restaurant is using a big flat iron grill that is impossible to lower and raise temps on. It is set to cook eggs, bacon, sausage, pancakes, etc.
To attempt to cool off a section to cook eggs to your likeing would take the cook over 30 mins of clean up, cooling off a section, checking with thermostat, watching your eggs and ignoring the other 19 meals he is cooking, etc.
Eating out doesn't mean you get it exactly how you like it, that is at home. Eating out you eat what they offer or you go to the next food joint.
