Depends on if you're trying to do this for a regular dinner, buffet, a larger event, or a restaurant.
Let's say it's for dinner and you're having company (which seems the most likely scenario as the weekend is upon us) :)
I'd set it up buffet style - Have a big tossed salad out with lowfat ranch dressing, lowfat italian dressing, Catalina and olive oil and vinegar to the side, salt and pepper nearby. Keep it simple... lettuce mix, tomatoes, celery, cucumbers... nothing too strange.
If you want to splurge, put out a bowl of steamed (and chilled) shrimp. Cocktail sauce and lemon with that... some folks might want to just put them on their salad. You could also put out little bowls of "goodies" like black olives, julienned green and yellow squash, marinated mushrooms, marinated artichoke hearts etc if you want to get "fancier" :)
Have decent bread or rolls on the table, some folks would like to dip those in olive oil so have small plates handy for that.
Do a vegetarian lasagna and a meat and cheese lasagna... that way your guests can choose. Green beans are a nice side for lasagna.
If you're over 21 and a wine drinker (or your guests are) then a good choice is Bolla Valipocella or Citra Montepulciano D'Abruzzo, nice for a crowd, not too expensive, both soft enough for the food listed above.
For dessert, just make coffee - amaretto flavored if you like - and have fresh strawberries in a big bowl and a platter of biscotti (Nonni's is good and available at the supermarket)
