lemon juice has "citric acid" which is an antioxydent. The browning you see when you slice an apple and expose the meat inside is the reaction it has when exposed to oxygen... it is "oxydizing". By applying lemon juice, an anti-oxydent, it prevents the browning, or "oxydizing" of the apple.
