To prevent bacterial and/or fungal infection. Those make for some super nasty bad funky brews...if you're lucky, they only taste bad...worst case, get you really sick.

because bacteria and wild yeast can ruin your wine.
little nasty bugs, other yeasts, ect will think that fermentation is the bomb! and go to town.
I knew someone who tried to make strawberry wine, and forgot to add the yeast- yet it fermented due to the natural yeasts on the fruit.
She had the yeast growing in a jar on top of her fridge. She liked it better because it made her wine turn out really good.
because if you didn't clean it out, or off the bacteria could grow into something deadly, or maybe even a kind of bromide something or ether...

if you dont sterilize you could end up with alot of vingar or off flavors and aromas from wild yeast
