Hi!

The taste and how much sugar there is mainly and these are only cooking chocolates, so the taste has to have little sugar in order for the food you are preparing to have ENOUGH sugary "goodness"!

Bittersweet- Small amount of sugar.
Unsweetened- No sugar, at all.
Semisweet- More sugar then bittersweet, but less than normal chocolate.

Hope this answers your question!

The percentage of cocoa, milk and sugar differs among these. In unsweetened chocolate you can find about 75-80% cocoa. I can't eat this kind of chocolate and you use it for cooking mostly. Bittersweet has more milk and sugar, semi-sweet has even more milk and sugar. milk chocolate has even more. You find this kind in most commercial brand candies. I like bittersweet chocolate. That's quality. I would rather buy less higher quality chocolate than buy more sugar.
Mainly the amount of cocoa liquor / ground cocao mass by weight. milk chocolate has addition of milk products (dried) and a minimum of 10% cocao liquor by law. all have varing amount of sugar from zero up.
bittersweet = semi sweet means minimum 35% cocao liquor(see above). unsweetened is supposed to be cocoa liquor and cocoa butter(ivory coloured fat derived from the dried and roasted cocao bean) only. white chocolate is not legally chocolate because it has no cocao liquor but is made from cocao butter and may or may not have other fats)
One of them's unsweetened, one of them has a bit of sweetener in it, the other doesn't have very much sweetener at all.
sugar
Unsweetened has no sugar at all

bitter sweet has about 35% chocolate liquor, a mild amount of sugar

semisweet has 35% chocolate liquor with more sugar.

The amount of sugar depends of the brand.
