That depends. I can think of two ways to alter the oil content... (1) the effects of baking vs roasting or frying (2) using liquid- liquid extraction techniques to separate and collect the nut oils. In fact, the nut oils are more valuable in many cases than the nuts themselves. Visualize decaffeinating coffee as another example of removing something from a product prior to sale. Of course, Diamond wouldn't promote the "we kept the oils from these nuts. Hope you don't mind..." Well, I for one, do mind, the oils in many nuts contain the moneunsat'd fats that give them their healthful qualities.
