Nowadays, wine making is more controlled science instead of a natural process. And each wineamaker is trying to achieve a specific target in the final product instead of leaving it to mother nature.

I have a friend who's dad makes wine in the basement as a hobby. He tells us to be careful not to move the bottles. I think he said that if you cause motion, it upsets the fermenting.
From Wikipedia: "Proteins from the grape are broken down and the remaining yeast cells and other fine particles from the grapes are allowed to settle." So if the bottle is moved, the fine particles don't settle properly.
Also, wine has to be stored in air-tight conditions to prevent oxidation.
