CRAB HOT DISH

2 (6 oz.) cans crab meat or 1 lb. frozen crab meat
1 c. diced celery
1 med. green pepper, diced
1 med. onion, diced
1/2 c. mayonnaise
1/2 tsp. salt
8 pieces bread
4 eggs
3 c. milk
1 can cream of mushroom soup
Cheddar cheese, grated

Drain and cut crab meat into chunks. Dice half of bread; put into buttered large casserole. Mix crab, veggies, mayonnaise. Spread over bread. Add remaining bread. Mix eggs and milk. Pour over mixture. Refrigerate, covered, several hours. Bake 15 minutes at 350 degrees. Add undiluted soup and cheese. Bake 60 minutes more. Serves 8 to 10. NOTE: Casserole expands. Be sure to use large casserole.


stirfry with a lot of garlic and some chilis Chilli Crab

Ingredients
1/2 kg crabs
8 fresh red chillies
5 cloves garlic
3 tbsp cooking oil
Coriander for garnishing
3 tbsp tomato ketchup
1 tbsp of sugar, or according to taste
Salt, according to taste
1 tbsp soya bean paste
1 cup water
1 tbsp corn flour
1 tsp lime juice
Coriander leaves

Method
Pound garlic and chilli. Heat the oil in a wok, and fry the garlic and chilli till fragrant. Then add in crab and stir-fry for a minute or two.

Mix the tomato ketchup, salt, sugar, soya bean paste, water and corn flour to make the sauce. Add the sauce mixture to the crabs, and stir well for two minutes. Cover the wok and simmer over high heat for five to seven minutes till the crab shell turns bright red.

Remove cover, and add in the lime juice. Garnish with coriander leaves and chilli slices.
