Pecan Rice Pudding
INGREDIENTS
1 quart milk
2 1/4 cups uncooked white rice
1/3 cup maple syrup
1 teaspoon grated lemon zest
1/2 cup pecan halves
DIRECTIONS
In a medium saucepan over medium heat, bring rice and milk to a boil. Reduce heat, cover and simmer 25 minutes. Stir in maple syrup, lemon zest and pecans. Pour into serving dishes and chill until set.

Coconut Lime Rice Pudding
1 cup Medium Grain Rice
2 cans (13-14 oz., each) light unsweetened coconut milk
2-1/2 cups show milk
1 cup sugar
2-1/2 tsp. fresh lime zest
Toasted sweetened flaked coconut for garnish
In 3-quart heavy saucepan, bring coconut milk, milk, sugar and rice to a gentle boil; reduce heat and simmer uncovered for 25 minutes, stirring occasionally. Remove from heat and add lime zest. Serve at room temperature or chilled. Sprinkle with toasted coconut if desired. Serves 8

Chocolate Peanut Butter Rice Pudding
1 cup water
3 cups milk
1 cup uncooked Extra Long Grain Rice
3 Tbsp. cocoa
2 heaping Tbsp. all-purpose flour
1 Tbsp. butter
2 heaping Tbsp. peanut butter
1 sliced banana, optional
In medium saucepan, combine water, milk, rice, cocoa and flour. Cook and stir, uncovered, over medium heat 15 minutes. Remove from heat; stir in vanilla, peanut butter and butter. If desired, stir in sliced bananas. Serves 6
