I love shopping at Trader Joe's. Not only do they have high quality food at great prices, but there's usually someone handing out yummy samples. A few weeks ago the sample of the day was Simple Artichoke Dip which came with printouts of the recipe:
2 14 oz. cans of Trader Joe's artichokes (packed in water, not oil)
2 cups of shredded Parmesan cheese (fresh, not canned)
1 cup of mayonaise
Salt and pepper
Drain the artichokes from the can. Coarsely chop them. Combine chopped chokes, cheese, and mayo into a microwave or oven-proof serving dish. Microwave on high heat for 5 minutes, pausing occassionally to stir, to ensure that the dip gets heated evenly. Add fresh ground pepper and salt to taste.
Serve with toasted, thinly sliced French baguettes, crackers, or my favorite - leaves of endive.
INGREDIENTS:
* 1 can artichoke hearts, drained, about 14 to 15 ounces
* 2 tablespoons finely chopped onion
* 1/3 cup mayonnaise
* juice of 1/2 lemon, about 1 to 1 1/2 tablespoons
* 1/4 teaspoon cayenne pepper, or to taste
* 4 slices bacon, cooked, drained, crumbled
* salt and pepper, to taste
PREPARATION:
Drain and mash the artichoke hearts; combine well with the onion, mayonnaise, lemon juice, and cayenne. Add the crumbled bacon to the artichoke mixture. Taste and add salt and pepper as desired. Chill before serving.
Makes about 1 1/2 cups

1 tablespoon of minced garlic
3/4 cup of shredded parmesan
1/2 cup of shredded asiago cheese
black pepper
Mix together, put in a greased casserole. Bake until hot and bubbly. I like to serve it with sliced baguettes or tortilla chips.
