does anyone hv any ideas for the filling? it can be chocolate, custard, or simply buttercream.

in a pinch i've used Jell-O french vanilla instant pudding

Any of the above plus could be plain whipped cream strawberry, or cherry either way its all about you and your personal preferences and how much extra work you are in for strawberry and Cherry would need to be mixed with a gelatin so it doesn't just run right out the end whereas whipped cream can be bought in a spray can and just shot right in

Pastry Cream

1/2 cup sugar
2 T. corn starch
1/4 t. salt
2 cups half and half or light cream
1/2 t. vanilla
4 beaten eggs yolks

In a 2 qt heavy saucepan stir together sugar, cornstarch and salt. Gradually stir in half and half. Add vanilla. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more.

Gradually stir about half the hot mixture into the beaten egg yolks. Return the egg yolk mixture to the saucepan. Bring to a gentle boil. Reduce heat. Cook and stir for 2 minutes. Pour into a bowl. Cover surface with plastic wrap. Cool slightly or refrigerate until serving time. (Do not stir after mixture sets or it may separate and thin.)

To serve spoon about 3 tablespoons into each cream puff or eclair.
