first of all un like some of the answers above mantioned the resaurants don't nececerely use anithing other then preservatives (that don't influance the flavore in any way)
they simply use ighther home made Mayo or buy a verry creamy one.un like the above answers mantion Mayo in not made with many eggs actualy mayo hase about %95 content of oil the egg and the musterd are there pedomenantly to bined it all together (although don't get me wrong the quality of both the egg and the musterd have a big influance on the taste and final resolt).
actualy you'l be suprise to know that the restaurants Mayo taste better because of what they don't do ruther then what they do.(meening un like you they don't spice it or ad anithing to it for that metter!)
they simply use good fresh (not expensive)ingridients, salt and pepper and that's it!
The secret as allways in cooking is not in the reciepy (like most people think) there are many good and diferent recipys for the same dish!But the tecnique will ditermin the final resolt!!!
The sicret to good food always was and always will be simplisity!keep it simple and don't try to change something thats allready is good like fresh Eggs and good Dijon Musterd and good fresh Oil!

Buy a creamy Mayo like a salad Mayo (and not those toxic ones)you should know! I don't know which country you are in otherwise I would recomend "Spak" Mayo Souce they even have a light %50 which is good).
Get a pot and boil water take the eggs ( how meny you want)
and put them in the boiling water ( put them in only when the water are BOILING don't make the comone mistake of just droping them in the water and pick them up an houre later when they are dead), you boil them for exectly 11 minuts (now don't be a smart *** because if it dosen't work youl blame me so I expect you to actualy time the process) after 11 minuts take it off the heat and imidietly cool them with running cold water from the tab.
At this stage I would recomend to chop very finely onion to ad to the mix but thats intirely up to you allthough I can tell you that the clasic egg salad is with onion.
you then peel the eggs and take a robast normal eating fork and place one at a time an egg in a round flat bottom ball (you can cutt them in half befor just to help the proces)and start pushing with the teeth of the fork down on them untill you crush them into small picese, after finishing crushing every egg remove it to another container befor placing another one.(to avoide over crushing meening mashing)this proces is similar to making a morange meening you create a cloude efect because of the flafines of it.after you put all the crushed eggs in a mixing bawl you then ad the thinly choped onion (ratio one small onion to every 4-5 mediume eggs)mixe them well ad a pinch of salt and a pinch of black pepper don't forget you can always ad more later so take it easy).
Then simply start puting in the Mayo and mix it well wilst adding more after tasting untill you are happy with the resolt taste wise of course, and then chil it in the frige it taste better could!

Home made is so much better! My Mum's mayo is the best! I think the store bought mayo is tasteless, so the home made one gets my vote.
What mayonnaise do you use? Try changing that. Mayonnaise is made with egg so maybe the shop where you get your ready made stuff uses home made or a certain brand. Go ask them.
