EGG DROP SOUP

CREAMED EGGS ON TOAST

For one cup of sauce:
1 cup cold milk
2 Tbsp. Gold Medal Wondra flour
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
? tsp. onion powder
mustard, to taste
hard boiled eggs, sliced

Heat all ingredients to boiling over medium heat, stirring often. Boil and stir one minute. Remove from heat, stir in sliced hard-boiled eggs or tuna. Serve over toast.


Quiche is a great egg dish; here are a couple of my favourite quiche recipes (if you need to use more eggs, you can get away with adding an extra):

SPINACH QUICHE

1 nine-inch pie crust, unbaked
10 oz. frozen spinach, thawed
? medium onion, chopped
1 cup grated cheese (Swiss or mozzarella)
2 eggs (may need 3 depending on size of pie tin)
1 cup milk (may need 1? depending on size of tin)
1 tsp. garlic powder

Sprinkle spinach, onion, and cheese in pie crust. Beat eggs slightly. Beat in milk and garlic. Pour egg mixture into pie plate. Bake uncovered until set, in 425? oven 15 minutes. Reduce oven temperature to 300?. Cook uncovered until knife inserted half-way between center and edge comes out clean, about 30 minutes longer. Let stand 10 minutes before cutting. 6 servings.


CROISSANT-CRUST QUICHE

Original Ingredients:
2 tablespoons margarine or butter
2 cups sliced mushrooms
6 green onion, sliced (about 2 cups)
1 package (8 ounces) refrigerated crescent rolls, separated into 8 triangles
1 envelope Lipton Golden Herb with Lemon Soup Mix
? cup half-and-half
4 eggs, beaten
1 cup (about 4 ounces) shredded Monterey Jack or mozzarella cheese

Ingredients I use:
2 cups sliced mushrooms
? package spinach
1 package (8 ounces) refrigerated crescent rolls
1 envelope onion soup mix
? cup evaporated milk, regular milk, or half-and-half
4 eggs, beaten
1 cup (about 4 ounces) shredded Swiss, or cheddar cheese

Preheat oven to 375°F.

In 9-inch pie plate, arrange crescent rolls to fill the bottom and sides of the plate. Press the rolls to fill in space.

In medium bowl, combine onion soup mix, half-and-half, and eggs. Stir in cheese, mushrooms, and spinach (you can vary the amounts of these to your liking). Pour into prepared pie crust. Bake uncovered 30 minutes or until knife inserted in center comes out clean.

Makes one 9-inch quiche.


EGG FOO YONG
(adapted from Betty Crocker)

vegetable oil
eggs
bean sprouts, drained (if you have them; we usually don’t)
chopped onion
You can add a lot of other vegetables, too, like: green beans, carrots, peas, broccoli, Chinese vegetables (canned or fresh) (optional)
Sauce (below)

Heat oil in a 10-inch skillet. Beat eggs until thick and lemon colored, about 5 minutes. Stir in vegetables. Pour ? cup egg mixture at a time into skillet. Push cooked egg with broad spatula to form a patty. Cook until patty is set; turn. Cook over medium heat until other side is brown. Serve with sauce.

Sauce:
? cup water
1 tsp. cornstarch
1 tsp. sugar
1 tsp. vinegar
2 Tbsp. plus 1? tsp. soy sauce

Cook all ingredients, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

Do ahead tip: Cover and freeze cooked patties no longer than 1 month. Heat frozen patties uncovered in 375 oven until hot, about 15 minutes.


SPINACH CHEESE ROULADE--this sounds difficult but it's not
(from Favorite Brand Na me Vegetarian Cooking)

4 tsps. margarine, divided
2 Tbsps. flour
1 cup skim milk
2 cups Egg Beaters (or 8 eggs)
1 med. onion, chopped
1 (10-oz.) package fresh spinach, coarsely chopped
? cup low-fat cottage cheese (1% milkfat)
1 (8-oz.) can no-salt-added tomato sauce
? tsp dried basil leaves
? tsp garlic powder

In small saucepan, over medium heat, melt 3 tsp margarine; blend in flour. Cook, stirring until smooth and bubbly; remove from heat. Gradually blend in milk; return to heat. Heat to a boil, stirring constantly until thickened; cool slightly. Stir in eggs or Egg Beaters. Spread mixture in bottom of 15 ? x 10 ? x1 inch baking pan that has been greased, lined with foil and greased again. Bake at 350 F for 20 min or until set.

In medium skillet, saute onion in remaining 1 teaspoon margarine until tender. Add spinach and cook until wilted, about 3 minutes; stir in cottage cheese. Keep warm.

Invert egg mixture onto large piece of foil. Spread with spinach mixture; roll up from short end. In small saucepan, combine tomato sauce, basil and garlic; heat until warm. To serve, slice roll into 8 pieces; top with warm sauce. Makes 8 servings.

Prep time: 30 min Cook time: 25 min


Breakfast-type recipes:

GERMAN PANCAKES

10 eggs (I sometimes use 6 but usually I use at least 8)
1 cup flour
1 cup milk
1/2 tsp. salt (optional)
1/2 stick margarine or butter

Melt margarine in 9x12 baking pan in 375°- 400° oven. Mix eggs, flour, milk, salt; pour in margarine – leave coating in pan. Mix. Pour into pan. Bake for 25 minutes. Sprinkle with powdered sugar, orange juice, lemon juice, syrup, or fruit.


JAPANESE EGGS

Fold eggs in a bowl. In a cup, mix equal parts soy sauce and sugar. Pour in frying pan and heat until bubbly. Add enough eggs to make a thin (crepe-like) layer in the pan. When the edge begins to curl up, start rolling up the egg from one edge. Remove as soon as the egg is rolled up.


SALSA EGGS

Heat a saucepan with oil. Add a thin layer of salsa. Break eggs into the salsa, then scramble.


SAVORY FRENCH TOAST

3 eggs
2 Tbsp. milk
Parmesan cheese

Mix eggs and milk. Mix in cheese. Cut slices of bread horizontally into 4 strips. Dip into egg mixture. Fry in oil-coated skillet.


CREPES

4 eggs
1 cup flour
1 cup milk
pinch of salt

Mix all ingredients with whisk. Melt butter in skillet. Pour some batter in skillet; tilt skillet to make large round crêpe. Flip. Remove to warm platter. Spread with whatever you want such as butter and syrup, fruit, ham and cheese, broccoli and cheese, yogurt and sugar, cinnamon sugar and butter, cottage cheese and crushed red pepper, or chocolate chips and walnuts. Roll up, microwave if necessary to melt cheese or chocolate, and eat.

Try a frittata, you bake an egg mixture. Can use asparagus, apples, tomatoes, any combination.
Egg curry

1/2 tbsp vegetable oil
2 onions, diced
6 roma tomatoes, diced
4 hard boiled eggs, shelled and cut in half
2 tsp chilli powder
2 tsp cumin powder
salt as needed

Heat oil, add the onions. Let cook for a little bit, and then add the tomatoes, salt, chilli powder and cumin powder. When everything is cooked, add the eggs and then boil for a few more minutes. You can serve the curry with white rice.
egg casserole..very easy

beat a dozen eggs and pour into a 13 X 11 greased casserose dish

add in 8 oz of your fave shredded cheese, a pound of cooked crumbled sausage or bacon (or a mixture) add salt and pepper to taste. Bake at 375 for about 30 minutes until golden brown..top with those fried onions that you buy for green been casseroles and bake another 5 minues


let set for 4 minutes before cutting

Yes I do! This went over well at an Easter morning potluck at our church!
You will need:
1 bag tater tots
1 lb sausage (not links)
3 cups cheese
6 eggs
1 onion
2 lg green bell peppers
Brown sausage
put one layer of tater tots on bottom of dish
layer meat, onions and peppers on top of tots
then put 1/2 cheese on meat layer.
layer again with tots and meat mixture
whip up eggs and pour evenly over the layers
bake at 375 for about 20 minutes
top with cheese and bake for another 10 minutes
It's awesome to top with salsa and sour cream if you want!

poach for a few minutes in boiling water that has a teaspoon of vinegar, serve with hollandaise sauce over canadian bacon enjoy.
ok, how about egg curry?
slice 1 medium onion
2 clove of garlic sliced
1/4 tsp of fenugreek seed
1/4 mustard seed
1 can chopped tomatoes
2 tbsp curry powder (this is medium hot, reduce to 1 tbsp if wanting it less hot!)
1/2 tsp turmeric powder
4 boiled eggs (remove shell)

heat pan with 1 tbsp oil & put in fenugreek seed & mustard seed. when they strat to pop add in onion & garlic. when they soften add in turmeric & curry powder. keep mixing it quickly (as it can burn) & immediately add in the can of tomatoes. let it boil & add salt to taste. when the curry gets a little thick add in the eggs. serve hot with rice & stir fry veges. hope it helps =)
