Well, I would, using about 1.5-2" thick cuts of it, simmer it in a pot on the stove. Brown it in olive oil on both sides to sear it, add a good cup (or two) of red wine (for flavor and to tenderize) and a couple cups of beef broth. Throw in some rosemary and thyme, a teaspoon of minced garlic, salt and pepper and maybe 1/2 of an onion, diced. I'd bet you're gonna want to let it simmer over low to med-low heat for a good 2 hours. Replenish water as needed - don't let it boil dry! Add some diced potatoes, a carrot or two, and me, I'd add about julienned beets as well, for flavor, texture and an awesome color. Add a good splash of balsamic vinagrette if the broth needs something, you know?Simmer for another good 1/2 hour or until fork tender. I'd serve the veggies on the side with a dolop of sour cream.
