I have made ceviche and carpaccio mainly with white-fleshed fishes and like the results, anyone find good results with fresh tuna?

I personally dont care for it in tuna or salmon, for that matter. The citrus kinda takes over and its unpleasant, but you can try maybe you'd like it.

But with catfish or red snapper!, i use a mix of orange and lime juice, cayenne pepper, sea salt, sliced onion, and garlic with some herbs! Oh man! Its so good!

TIP: always use white fish, but change up on citris. Like tangerines or those lemon/orange hybrids. Its great!

tuna is better to me, assuming its very very fresh Personally, I don't care for it. The lemon overpowers the natural flavor of the fish. Have you tried marinating with olive oil and butter instead and just using the lemon juice to sprinkle on once it's done? It's not so sledgehammer mean done that way. Hell, just a little lemon pepper is sufficient!

im sure it is great that way, the only thing that you will find is that it makes the tuna become really pale. Now there is a sushi grade white tuna that you can get which is just as delicious, might i suggest a little sesame oil and sea salt to your lemon juice, and finish with some green onion!!!!
mmmmmmmm mmmmmmmm Yes, and my sister does it with beef and olive oil.
