Does anyone have a good recipee to cook fish?

Delicious, easy and healthy. (Bonus, no clean up!)

On a large piece of tin foil place a large handful of fresh spinach and couple of small ripe tomatoes cut in half. Sprinkle with salt and pepper.
Place a fillet of fish on top of this. (You can use any flaky white fish, grouper, snapper, tulip, even salmon works.)
Drizzle with olive oil, sprinkle with salt, pepper, minced garlic and parsley, (preferably fresh but dry is OK). Then squeeze the juice from half a lemon over the entire mound. Seal the tin foil upward around the ingredients like an envelope.
Pop the whole thing in a preheated 350 degree oven for about 20-30 minutes depending on how large your fillet is. Remove from the oven and let stand 5 minutes, then unwrap and serve!

You won't believe this unless you try it. Trust me it is wonderful. Our entire family is crazy about it.

Oven Fried Catfish

1-Cup Spicy Pork Rinds (crush by using a glass like a rolling pin)
?-Cup Grated Parmesan Cheese
?-Cup Mayonnaise
2-Tsp Seasoned salt or Garlic salt
2-Pounds Catfish Filet's

Mix pork rinds and cheese in large bowl. In separate bowl mix mayo & seasoning. Using a knife smear coating of mayo mix on both sides of fish. Coat both sides with pork rind mix. Place in a baking pan (spray with Pam) and bake at 375 degrees for 25 to 30 minutes.

Take your fillets of whatever fish you have and bread them with (fryin magic) brand seasoned coating mix!
Then either deep fry them or Pan fry them!
