Pan Fried Almond Ocean Perch
Prep: 5 min, Cook: 10 min.
2/3 cup seasoned breadcrumbs
1-1/4 lbs. ocean perch fillets
2 Tbs. plus 2 tsp. oil or unsalted butter
2/3 cup sliced almonds
3/4 lemon, cut in wedges
Place breadcrumbs in a shallow dish and dredge fish to coat. Heat oil or butter in a heavy nonstick skillet over medium heat. Sauté fish 4 minutes. Turn, add almonds and sauté another 3-4 minutes, or until fish flakes easily. Serve with lemon wedges. OCEAN PERCH
2 lbs. perch
4 onions, sliced
1/2 c. mayonnaise
1 tsp. Worcestershire sauce
1 tbsp. lemon juice
1/2 c. grated Parmesan cheese
2 tbsp. chopped parsley
Cook sliced onions in salt water until tender. Spread drained onions in a shallow baking dish. Place fish on onions, combine remaining ingredients and spread over fish. Bake 30 to 40 minutes at 350 degrees. Serves 6. Try this recipe with sole and other fillets.
