When I was younger I had fry bread made by an old Navajo woman. I have several recipes now, but none quite the same. She did not use milk(dry or fresh). Can anyone help?

2 cups Flour
1 tsp. Salt
3 tsp. Baking Powder
1 cup Water
Version #2
3 cups Flour
1 tsp. Salt
1 tbs. Baking Powder
1 1/2 cup water
1 tbs. Shortening (cut in)
Using the ingredients from either version above, mix ingredients and let sit for 10-15 minutes.
Break off a ball of dough about golf ball size and pat out no thicker than 1/4 inch. (In some tribal traditions a hole is always made in the center which has spiritual significance)

Fry in deep hot oil to a light golden brown, turn once to brown both sides. (Oil is hot enough if a small test piece of dough dropped in the oil begins cooking almost immediately and rises to the top.) Drain bread well and pat with paper towel to remove excess oil. Keep covered in a bowl while cooking to keep bread warm.

Serving - Usually eaten like bread with soup, stew or posole

Variations - Eat with honey, powdered sugar, cinnamon.


FRY BREAD

3 C. unbleached white flour

1 C. masa corn flour (not cornmeal)

3 T. sugar

1/2 t. salt

2 t. baking powder

1 C. warm water

Peanut oil or lard for deep-frying

You will need a wok or deep heavy pot for deep-frying, a medium-sized bowl and tongs.

Fill your wok or pan with 2 inches of peanut oil or lard and heat over medium to medium-high heat.

Meanwhile, combine the dry ingredients in a bowl. Make a well in the center and stir in the water. Mix to form a dough, and knead briefly. The dough should be soft but not sticky. Add a little more flour or water if necessary.

Cut the dough into 8 equal pieces. Flatten one piece to a thin disc about 5 inches in diameter and less than 1/4inch thick. Cut a 1-inch triangular wedge out of the center of the bread and test the oil temperature by dropping the wedge into the oil. The oil should sizzle quietly and the dough wedge should begin to change color. If it burns or sizzles fiercely, the temperature is too high; adjust it accordingly. Slide the bread into the oil (the oil will sizzle and bubble up through the hole in the middle) and cook until golden on the bottom, about 2 to 3 minutes.

Then turn over, taking care not to splash yourself with oil, and cook until golden, approximately 1 1/2to 2 1/2more minutes. As the bread cooks, shape the next one and cut a triangular hole in the center.

Place the cooked bread on a plate lined with paper towels to drain while you prepare and cook the remaining breads. Serve warm.

Makes 8 servings.



NAVAJO FRY BREAD


Ingredients

2 cups flour Cornmeal or flour
4 tsp baking powder
2 cups shortening
2/3 cup warm water


Procedure

1. Combine flour, baking powder, and salt in a large mixing bowl.
2. Add warm water to flour mixture and work into a smooth and elastic dough.
3. Divide dough into balls of desired size. On a board ligthtly dusted with cornmeal or flour, roll out each ball of dough into a 1/4-inch thick circle. Cut a hole in the center of each circle.
4. Heat 2 inches of shortening in a heavy pan at medium-high heat.
5. Fry the dough, one circle at a time, until golden on both sides,turning once. Drain on absorbent towels.
Yield: 6-8 servings

Great toppings for Navajo Bread would be re-fried beans, lettuce, chopped tomatos, Cheddar Cheese, salsa and sour cream.

Ingredients
2 c. Flour
1/4 t. salt
1/2 T baking powder
3/4 c. warm water
Shortening or Vegetable Oil
1/4 c. sugar
1 T Cinnamon
pinch of nutmeg
Directions
1. Wash your hands and put on an apron
2. Mix flour, salt and baking powder in a bowl
3. Add warm water and blend completely
(until the dough feels like biscuit mix)
4. Combine cinnamon, nutmeg and sugar in bowl
5. Put 1 inch of oil in a skillet
6. Warm oil
7. Make dough into patties
8. Fry dough till golden
9. Coat bread with spice mixture
10. Serve and enjoy

4 cups of white flour
4 Tablespoons of sugar
1/2 teaspoon of salt
1 pint of warm water
1 cup of dry milk
2 eggs
1 stick butter or margarine, melted
2 packages of dry yeast


Mix dry ingredients together - except for the yeast - in a large bowl. Mix warm water with dry milk. Add milk mixture to dry ingredients. Add eggs and melted butter. Mix well. Add two packages of dry yeast. Mix all ingredients well.

Knead dough until a good consistency, and form into a ball. Grease a large bowl, and put ball of dough in bowl and let rise to the top of the bowl (about 30-60 minutes). Punch dough down and let rise again to top of bowl.

When dough has risen for second time, it's time to make your frybread!

Using an electric skillet or large frying pan, heat enough vegetable oil to cook several disks of dough at one time. Let oil heat up to 160-180 degrees. When hot, test oil with a little piece of dough. If dough sizzles and begins to brown, the oil is ready.
