2 packets Heat & serve chocolate pudding mix - NOT INSTANT
2 packets heat & serve Vanilla pudding mix - NOT INSTANT
(My* T Fine i think is the name of the one brand or jello makes it but do not get the instant itdoes not work)
1 box store brand graham crackers
1 large casserole dish (like a lasange pan, large square or rectangle plastic container works too)
Prep - must be made the night before or early in the AM - takes about 6-8 hours to set
place a sinlge layer of the graham crackers in the casserole dish (break them in half if you need to so it is well covered - do not crumble them though)
prepare the 2 choclate puddings as directed (the microwave directions work very well because it will not burn as easy as on the stove) when the pudding is hot & thick pour it slowly over the crackers - if the crackers pop to the top push them down with a spoon carefully
place another layer of cracker on top of the chocolate pudding
prepare the vanilla and repeat pouring slowly and evenly over the crackers
crumble enough crackers to cover the entire top in a layer of crumbs (i put them in a baggie and crush them by hand then pour it over)
cover (use lid, plastic wrap or tin foil) place in fridge for 6-8 hours (keep cold until ready to serve)
it will set and can them be cut and served like cake/lasagne!!!

yes it's so easy...get a pound cake from your grocery or bakery and slice it horizontally...across into layers...carefully remove each layer and start at the bottom with a easy creamed cheese frosting 2 large pkgs. creamed cheese mixed with 2 cups powdered sugar and orange juice enough to moisten and zest of orange. Beat until smooth and frost each layer then the outside. Top with mandarin canned oranges drained and some toasted almonds...and put leaves of mint around the bottom...for garnish. Slice in 1 inch slices and serve with ice cream or cool whip. Easy Chocolate Mousse
1 cup semisweet chocolate chips
1 large fresh egg
1 teaspoon vanilla extract
1 cup heavy cream, heated
Sweetened whipped cream for garnish
Place chocolate chips, egg and vanilla into the container of electric blender and blend for 30 seconds.
Remove center of blender lid and while machine is running, slowly pour heated cream into the chocolate mixture. Blend until well mixed and chocolate chips are melted.
Pour into parfait or wine glasses. Refrigerate until set.

Make a wacky cake and top it with some chocolate mint patties while it is still hot. Spread them around when they melt and top with cool whip. Very ecanomical and travels well. Buy a pack of meringue nests and some whipping cream. Break up the meringue into small bit size pieces and once you have whipped the cream mix them in together. Then put a layer of the mixture in the bottom of a glass bowel and add mixed berries (can be frozen if you cant get fresh) e.g strawberries, blueberries etc and carry on the layers of berries then cream. I make this and it always impresses guests
