I am also a stay at home Mommy and it's tough! I try to eat salads (tossed, pasta, chicken, egg, etc.) or sandwiches. I wash all of my lettuce and keep it in a zip lock baggie wrapped in paper towels. I will make a big bowl of chicken pasta salad and have it on hand for a quick lunch. I boil the pasta and add chunks of cooked chicken (rotisserie is really good), grape tomatoes, black olives, Italian dressing, etc. and keep in the fridge. I also try to have fresh fruit cut up so I can snack on that too. I feel your pain though. I need to practice what I preach a bit more too!

Make them seperate lunches. And NEVER eat the kids leftovers! chicken salad and yogurt
My kids loved raw vegies so I would make a vegie tray and then let them dip the vegies into French Onion Dip. I just ate the vegies. They also liked fruit. I would slice an apple through the middle, put peanut butter in it, put the apple back together and put raisens around the outside sticking to the peanut butter coming out. I would just eat the apple. Also slice bananas and put a bit of peanut butter on it and top with raisens. Very nutricious and low in calories, remember peanut butter in moderation contains good fat. My kids also loved tossed salad and I would just put vinegar on mine while they had dressing.

Low Fat Turkey Sandwich
Ingredients:
- 1 tsp low fat margarine
- 2 tsp minced shallot or spring onion
- 1.5 tsp flour
- 1/2 cup skim milk
- 1 oz Brie cheese
- 1 Tbsp Dijon mustard
- Dash ground nutmeg
- 2 slices of toasted Italian bread
- 1 oz sliced baked ham
- 2 oz sliced roast turkey breast
- 1/2 cup sliced asparagus spears
- 1 tsp grated Parmesan cheese
This is what you do:
Preheat oven to 350 F (180 C).
Melt the low fat margarine and add the shallots and saute till soft.
Sprinkle flour and stir quickly to combine.
Cook for about a minute and continue stirring.
Gradually add milk and keep stirring till the mixture thikens.
Add cheese, 1 tsp mustard, and the nutmeg, and keep cooking over low heat. Keep stirring for about 5 minutes.
Set aside.
Spread mustard on the bread slices.
Top each with 1/2 oz ham, 1 oz turkey and half the asparagus.
Spray a baking tray with cannola oil.
Stir sauce again and pour over the sandwiches.
Sprinkle each portion with 1/2 tsp Parmesan chees and bake till browned.
