1 tablespoon butter

DIRECTIONS:
In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
Heat oil in same skillet; add onion and saute until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.

I don't know if you would consider it great or not but this is how I make it simple... I take 2-3 lbs boneless skinless chicken breasts cut them into strips (thawed out about half way) cook them in a skillet with margarine and garlic seasoning or little minced garlic, and season salt maybe some onion powder, saute until chicken is done add 2 bags of frozen stir fry veggies I like to add fresh onion and green pepper too, then just let veggies steam cook with the chicken stirring frequently and in another pan I make instant rice and put the veggies and chicken over rice put some soy sauce on it and good to go... I just realized you wanted a fried rice recipe, sorry.
4 tbsp. corn oil
2 c. broccoli flowerettes
1 c. matchstick carrots
1/2 c. coarsely chopped walnuts
2 lg. cloves garlic, minced
4 chicken breast halves, skinned, boned & cut into thin strips
2 tbsp. soy sauce
2 tbsp. dry sherry
1 tsp. grated ginger root
1/2 tsp. sugar
2 c. chicken broth
1/4 c. green onion, sliced
1 c. rice

In large skillet heat 2 tablespoons oil over medium high heat. Add broccoli, carrots, walnuts and garlic. Stir fry 2 minutes. Remove vegetables. Add remaining 2 tablespoons oil to skillet. Add chicken. Stir fry 1 minute or until chicken turns white. Add soy sauce, sherry, ginger and sugar. Stir fry 2 minutes.
Remove chicken with slotted spoon. Add broth and green onion to skillet. Bring to boil. Stir in rice. Cover tightly and simmer 20 minutes. Stir in chicken and vegetable mixture. Remove from heat. Let stand covered about 5 minutes or until liquid is absorbed. Makes 4 servings.
1) beat up some eggs, add some pepper. stir fry on pan, set aside.
2) saute chopped garlic, onions, mix in diced chk. white meat/dark meat, con't stirfrying until meats is golden brown, blend in ur prechilled leftover cooked white rice (use spatula to fluff it out to uncrumbs them first), toss in some frozen green peas, shreds of lettuce/other fav., dash some fish sauce(v/flavorful don't overuse it, doesn't make the chk. fried rice taste fishy, can buy them from oriental markets), or u can sub tt w/soy sauce/chk. broth w/ a dash of cooking wine (chinese/american white wine), prefried eggs, dash of sesame oil, cover pan/not, con't stir fry/simmer for 2 min. & u r ready to go ! yummy !!
