Or try this:
Cook some basmati rice
Shell and clean the shrimp (if they are large cut them in half or quarters)
heat a wok add a little nut oil some chopped garlic, crushed fresh ginger and a chopped green chili.
Put the shrimp in the wok and add some Thai fish sauce and a small can of creamed coconut.
Once it comes to the simmer remove from the heat.
Stir in the rice and set aside.
Cut the tops off the peppers and remove the seeds.
Fill the peppers with the rice/shrimp mix, put the tops back on the peppers and bake in a moderate oven until the peppers are soft.
Then serve and enjoy

kabob shrimp with peppers...fry or grill the shrimp...sautee the peppers with maybe a little garlic or coconut whichever one floats your boat and put it on skewers. Quick easy and tastes really good.
Stuffed peppers. Cut the top off a pepper scoop out the insides and fill it with (precooked) rice, cous cous, meat or veg. put the top back on and put in the oven for 15 -20 mins. yum!

5 large red bell peppers
3 1/2 cups chicken stock or canned low-salt chicken broth
1 teaspoon paprika
1 teaspoon sugar

1 tablespoon olive oil
16 large uncooked shrimp, peeled, deveined, coarsely chopped
3 tablespoons thinly sliced fresh basil
Char red bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag. Let stand 10 minutes. Peel and seed peppers. Cut 1 pepper into matchstick-size strips and set aside. Coarsely chop remaining 4 peppers. Combine chopped peppers and stock in heavy large saucepan. Bring to boil; reduce heat and simmer until peppers are very tender, about 5 minutes. Working in batches, puree soup in blender until smooth. Return puree to saucepan. Mix in paprika and sugar. Simmer 5 minutes to blend flavors. (Can be prepared 1 day ahead. Cover bell pepper strips and soup separately and refrigerate.) Whisk in cream and pecorino Romano cheese. Season to taste with hot pepper sauce, salt and pepper.
Heat 1 tablespoon oil in medium skillet over medium-high heat. Add reserved bell pepper strips and shrimp and sauté until shrimp are cooked through, about 3 minutes. Season with salt and pepper. Divide shrimp mixture among 4 bowls.
Rewarm soup; ladle around shrimp mixture. Sprinkle basil over and serve.
Makes 4 servings.

Zip up French onion soup. Prepare soup, chop extra onions, set aside. 15-25 minutes before the soup is done chop up red bell peppers and/or spicy(jalapeno,habenjero) and peel the shirmp.(or for less prep time chop and peel, mix in a bowl, lightly marinate and put in the fridge). Saute the shrimp mix and put into large soup bowls no more than half-way full. Carefully and soup to bowls( at the dinner table would be easier) and top with the cheeze to melt.
You could also try substituting fish broth for some/all of the chicken or beef broth in the soup.

I myself find simple to be great. We like to take chicken breasts, split them long ways, so that they are thinner.
Roll up stove top stuffing in them and fasten with tooth picks. Fill the bottom of the baking dish with stuffing, put the chicken rolls in, pour a can of chicken broth over bake covered for hour or more depending on your oven.
I also let my kids pick out things in the cook books and then let them help.
