Everytime I cook fresh corn on the cob it turns out hard, like it's never been cooked. I boil in a large pot of water, and no matter how long it cooks, 15 mins. or 1 hr. it's never tender. Any suggestions?

Answers:
You're doing it the wrong way! You need to barely cook it...3 or 4 minutes TOPS. If you over cook it, the kernels lose their water and dry/toughen. Bring a large pot of water to the boil and add a tablespoon or two of sugar. Put your corn in, bring back to the boil, cover, and cook 3 or 4 minutes. Remove from water immediately and eat. :)

Other Answers:
add some salt to the water, it will soften the kernels

It might help to take the corn off the cob if you're trying for that effect. However, grilling is also a pretty effective method. Add some salt to the water and don't cover it...carn doesn't need to be cooked long...make sure your putting th corn in before it boils....good luck...

You could boild the ears to cook them, but I have found that wrapping the entire ear, husk and all, in foil and grilling untill completly hot works the best.

Cooking Don'ts

Don't add salt to the water. It only toughens the corn when it cooks.

Don't cool off hot corn by running under cold water. It will make the corn soggy.

Don't overcook or the kernels will get hard and the corn will loose some of its sweet flavor.

Keep the husk on the corn and place in on a hot BBQ grill direct heat, turning 4 times cooking a bout 2-3 minutes on each side. The kernels will be tender the center will be hard... You are cooking too long. It only takes about 5 minutes at most, just to heat it thoroughly. Try steaming it and not submersing it all the way in the water.

i'm not sure what steaming may do but i know it works well on other vegies.
and what kind of corn are you cooking? White corn is always very tender when boiled. Plus it is sweeter than yellow corn.

I'm a single guy ... I like my corn a little crunchy. But white corn seems to cook softer than yellow. After removing all the silk from the cob I soak it with water and than rearrange the husk so it's covering the cob ... microwave for 7 minutes. you are cooking it to long..only boil for 5 to 10 mins max
I like to add a 1/2 cup of sugar to make even the not so great corn nice and sweet..good luck!

You're cooking it too long, not too short. Make sure the pot is big enough, boil enough water for the corn to move freely, and you really only need to boil it for 6 minutes. It will be very tender and sweet. Also, make sure you are buying (or growing) eating corn and not cow corn, which is used for feed. Also, just to make sure, you are peeling the corn before you're boiling it - right? By the way, white corn will never turn yellow, so don't wait for that. Husk and desilk your corn, meanwhile have your water boiling hot before you put the corn in. As soon as the corn has changed colors to a deeper yellow you need to take it out of the water.
This should only take up to five minutes. Fresh corn is going to taste firmer than the frozen kind in the store or the kind soaking for hours on a buffet table. Good fresh vegetables should be cooked crisp, not soggy, or you lose all the natural goodness that's in them and the taste.

Put a little milk in the water when you boil it. always check your corn before purchasing. you can buy frozen or pull back the husks on fresh corn. i don't like to buy them already shrink wrapped in the produce department.
they are really great grilled w/ the husks on, then clean w/ ease.
