buy moo shu wraps from oriental markets, steam/ microwave.

WRAPPING:

3 c. all-purpose flour
1 1/2 c. water

Mix well. Knead for 10 minutes with a lifting and pushing motion. Dough will be sticky. Refrigerate, covered, overnight. Next day heat griddle to 300 degrees. Wipe warm griddle with wax paper.
Take the mass of dough in your hand and rub it on the griddle in a circular scouring motion. Pull the remaining dough straight up from the thin layer of dough which has adhered to pan.

Wrapping is done when edge starts to lift and peel (about 7 seconds). Lift from griddle, turn over to heat the other side for a second and remove to plate.


SWEET SOUR SAUCE:

1 c. sugar
1/2 tsp. salt
3 tbsp. catsup
1/2 c. vinegar
1 tbsp. cornstarch
1 c. water

Cook sugar, salt, catsup, and vinegar until like syrup. Mix cornstarch and water. Add to sauce and cook until thick. Keep warm.

FILLING:

1 lb. pork (chicken, shrimp, or mixture) shredded

MARINADE:

1 tbsp. wine
1 tsp. salt
2 tsp. cornstarch
1/2 tsp. Accent

Combine and soak while shredding vegetables.

VEGETABLES:

1/2 c. green onions, shredded
2 c. bamboo shoots, shredded
1 c. mushrooms, shredded
5 c. bean sprouts
1/2 tsp. salt
1 tbsp. soy sauce
1 tsp. Accent
1 c. ham shredded
1 carrot grated

Heat 1/2 cup oil to 425 degrees, then fry the meat for 2 minutes. Add the Vegetables in and fry, stirring for 2 minutes.
With the smooth side of the Wrapping to the outside, place 2 tablespoons of filling on each wrapper and wrap, folding over one end, then both sides, then rolling to unfolded end. If the wrappers, or skins, are warm, they will seal themselves. If not, the unsealed edges may be set in skillet to reheat and seal.

Heat deep fat to 300 degrees. Using tongs or chopsticks, immerse spring rolls in grease holding sealed edges together for a few seconds to insure firm seal. Fry rolls until golden brown, 5 minutes, and serve hot. Rolls may be wrapped, then frozen. Allow time to thaw and deep fry as above.
