Fried Rice Recipe

Recipe Summary

Canola oil
3 eggs
2 tablespoons minced garlic
2 tablespoons minced ginger
1 bunch chopped scallions, green and white separated
1 lapchang, diced (Chinese sausage), can substitute with 4 strips of cooked bacon
8 cups cooked, day old long grain rice
3 tablespoons thin soy sauce
1/2 teaspoon white pepper
Salt to taste

***It is recommended to use day old rice so that the drier rice can soak up the flavors. In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

not sure about fired rice, but here is a fried rice recipe,
3 cups of cold cooked white rice

2 tablespoons of peanut oil

2 green onions, chopped, roots and tips removed

2 eggs, beaten

3 tablespoons of soy sauce

Dash of ginger, fresh or spice

? cup of frozen peas and carrots (optional)



Add peanut oil to a large skillet or wok; stir the oil around until it covers the bottom of the pan.

Add all of the above ingredients into the skillet or wok except the eggs and soy sauce.

Begin browning the rice over medium heat, blending the ingredients together well as you brown.

When the rice is brown, push it to the side of the skillet and add the well-beaten eggs to the empty side of the skillet.

Using a spatula, fry the eggs, chopping, pushing, turning, until they are cooked through and in tiny pieces.

Stir the egg pieces back into the rice mixture, blending the ingredients together very well.

Blend the soy sauce into the rice mixture, cook until well blended and hot.



Serve as a side dish while hot.



*** Cooked finely diced meat can be added if you so desire.

I would go to the store and buy a frozen package of fried rice. Just add oil to the skillet and the frozen rice~
