OVEN-BAKED FRENCH FRIES

There are times when only french fries will go with a meal, but you just don't feel like going through the frying process. Don't reach for that store-bought bag in the freezer. The extra work involved with making your own is scrubbing and cutting the potatoes, which only takes a few minutes. Plus you control the salt and the oil. It is well worth the effort.

INGREDIENTS

* 2 pounds potatoes, preferably russet
* 2 tablespoons canola or other cooking oil
* Salt to taste

Preheat oven to 475° F. Lightly grease or spray 2 large baking sheets or, better yet, line with parchment paper. Scrub potatoes. (Peeling is optional.) Cut into 1/4 to 1/2-inch sticks, depending on desired thickness, by first making slices, then stacking the slices, about 3 at a time, to cut into sticks. Place in bowl; toss with oil and salt until evenly coated. Place in one layer on baking sheets. Bake for 15 minutes. Turn fries with spatula and switch racks if using two. Continue to bake about 25 minutes, or until well browned and crispy. Sprinkle with additional salt to taste and serve immediately.

Note: Make this in any amount desired.

coat a cookie sheet or shallow glass baking dish with PAM or a little bit of oil (if you're not calorie conscience). Cut the peeled (or unpeeled) potatoes lengthwise into thick slices and then in strips about 1/8th inch thick. If you have a slicer, use the wider spaced blades. Line your cookie sheet or glass baking dish with the uncooked potatoes only one layer, lightly salt. Bake for about 15 min @ 350*F then carefully remove from oven, turn fries over, lightly salt and return for another 15 min. Continue to do this until the potatoes are fully cooked. Remove from the oven, and serve :)

Cut potatoes in either chip shapes or wedges...about 3 or 4 wedges per half potato. Toss with some vegetable oil or olive oil and optionally, some herbs like rosemary (a classic) or thyme and some granulated garlic or powder. Arrange on a jelly roll pan or cookie sheet. Bake at 350 F for about 35-40 minutes or till golden brown. I like to add about a quarter cup water to the pan before tossing into oven. The inside of the chips will come out more tender and will crisp up after the water evaporates. Please don t!
