Spanish Rice Original

INGREDIENTS:
1 cup chicken broth
1 cup tomato sauce
6 slices bacon
2 onions, diced
1 cup uncooked white rice
2 tomatoes, diced
2 green bell peppers, diced
1/2 teaspoon chili powder
1/2 teaspoon salt and pepper to taste
1 (10 ounce) can sliced black olives, drained (optional)
1 (10 ounce) can whole kernel corn, drained (optional)

DIRECTIONS:
In a small saucepan over medium heat, combine chicken broth and tomato sauce. Bring to a boil while cooking the following.

In a large skillet over medium heat, cook bacon until evenly brown. Chop bacon, and set aside, reserving the bacon fat. Add onion to skillet, and saute until tender. Stir in rice, and cook until lightly browned, 3 to 5 minutes. Pour in boiling chicken broth and tomato sauce. Add diced tomatoes, green peppers, and chopped bacon. Season with chili powder, salt, and pepper. Cover, and simmer for 30 to 40 minutes. Stir in black olives and corn.


Spanish Rice

INGREDIENTS:
1 tablespoon vegetable oil
2 cups uncooked long-grain white rice
1/4 onion, chopped
1 green bell pepper, chopped
salt and pepper to taste
1 (14.5 ounce) can stewed tomatoes
4 cups water

DIRECTIONS:
In a large skillet, combine oil, rice, onion, green pepper and salt and pepper until the rice is a light brown color. Remove skillet from stove.

Mix tomatoes into the mixture. Pour in water (it should cover the entire mixture; use more if necessary). Return the skillet to the stovetop and bring the mixture to a full boil; salt and pepper to taste. When the mixture begins to boil, cover the skillet, and reduce heat to a simmer. Cook 12 to 15 minutes and never, I mean NEVER, remove the cover. After 12 to 15 minutes, turn stove off and let stand for another 12 to 15 minutes. DO NOT remove cover until the final 15 minutes has elapsed!


Spanish Rice Bake

INGREDIENTS:
1 pound lean ground beef
1/2 cup finely chopped onion
1/4 cup chopped green bell pepper
1 (14.5 ounce) can canned tomatoes
1 cup water
3/4 cup uncooked long grain rice
1/2 cup chile sauce
1 teaspoon salt
1 teaspoon brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1 pinch ground black pepper
1/2 cup shredded Cheddar cheese
2 tablespoons chopped fresh cilantro

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).

Brown the ground beef in a large skillet over medium-high heat. Drain excess fat and transfer beef to a large pot over medium low heat.. Stir in the onion, green bell pepper, tomatoes, water, rice, chile sauce, salt, brown sugar, cumin, Worcestershire sauce and ground black pepper.

Let this simmer for about 30 minutes, stirring occasionally, then transport this to a 2-quart casserole dish. Press down firmly and sprinkle with the shredded Cheddar cheese.

Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped fresh cilantro.

OK, thre are different kinds of spanish rice, so it's hard to know which one. BUt for the simplest one, which is just yellow rice do this:
Take about 1 cup of water, put in some salt and oil.
Bring to a boil.
Add 1 cup of rice.
Add 2 envelopes of "sazon Goya con culantro y achiote" seasoning. YOu can find this in any hispanic section of your grocery store.
Cover and cook on medium for about 20 min. or until the water evaporates. Stir constantly.
If you want, you can add some corn to the rice also, gives it a real nice flavor.

Spanish Rice
1 med green pepper
1 lb ground beef
2 cups rice
1 large can tomato sauce
1 med onion
1 small can tomato paste
2 1/2 cans water (large cans)
Dice pepper & onion and fry with ground beef until browned
Drain grease, add tomato sauce, tomato paste & water.
Simmer 15 mins
Cook 2 cups rice(according to pkg.) When rice is done pour sauce mixture over and simmer 5 more mins.
