I make fries all the time. I just peel them, slice them and deep fry them. In just a few seconds after I take them out of the oil, they get soft. How do I make them stay crispy?

soak them in cold water for a few minutes to get rid of some of the starch. drain & dry them with clean tea towel. they will stick to a paper towel, so i dont advise that one. deep fry at 375 until fries start to get tender. remove from oil. let them cool for at least 20 minutes. they can cool for several hours, it wont hurt them. then refry until crispy when ready to eat.

Try soaking then in ice water for 20 min. before you fry them, it sounds strange but really works. Also, fry then at least 20-25 mins!! The secret is that you have to cook them twice.

Do as you are currently doing. Take them out when cooked, drain them. Then slightly raise the temperature of the oil, and when hot then plunge the fries back in until golden brown and crisp.

This is not so much a recipe as it is technique.

1. In a large bowl, cover the potatoes with water.
2. In a deep fryer fitted with a basket or a heavy medium saucepan, heat 3 inches of vegetable oil to 340°F.
3. Drain the potatoes and pat dry with paper towels.
4. Add half the potatoes to the oil and cook until they begin to blister and turn golden, about 15 minutes.
5. Shake up the basket every once in a while (not too often – especially in the beginning when the fries are still soft), or run a fork through the saucepan to make sure fries are not sticking together.
6. Spread the fries on paper towels to drain and cool.
7. Repeat with remaining fries.
8. (Fries can be made to this point up to 4 hours in advance of serving).
9. Heat the oil to 375°F.
10. Add a quarter of the fries and cook until browned and crisp, 1 to 2 minutes.
11. Drain on paper towels and repeat with remaining fries.
12. Sprinkle with sea salt and some oregano.

One of the BEST ways I know to achieve crip French Fries EVERY time, is to cover them first with a FINE coating of cornstarch. Then, fry once, drain and fry again.
