I have mastered making eggs on the foreman :)
There are two things you can do:
1. Prop the legs of the front up slightly (using magazines or thin books you don't care if they get splattered) so that it is level. Just be careful whatever you use isn't flammable or you care if it gets ruined. You also have to be careful that it won't tip over from the weight of the lid. (This all depends on which model you have, I have a smaller one) Make sure the grill is really hot before putting the egg/batter on, that way it will start to cook, and slide around less, as soon as it hits the grill.
2. The other thing you can do, that has worked for me, is put some frozen cut up potatoes (ore-ida makes some tasty ones) at the bottom of the grill, and then once it is really hot and the potatoes are most-of-the-way done, pour just a small amount of egg onto the grill. It will slide down, and as it cooks it will harden and form a barrier with the potatoes. The little tray at the bottom will catch any that runs through, but there shouldn't be much. This works best for scrambled eggs, because it doesn't really keep much of a shape. But I've added cheese, veggies, etc.. to them so its kind of like an omellette. And the potatoes are a nice compliment!
I don't shut the grill, I keep it open.

You are better off using a pan for these. If you have your heart set on eggs, make a barrier on the end with a lump of tin foil. I'd forget about the pancakes, though. Good luck! Just prop the grill up on something so it's not on an angle anymore.

I have the wonderful new grill that has interchangeable plates. You should really think about upgrading it is really worth it.you don't.
