I'm surpising my Mom w/ cookies and a spotless house. The only problem is I don't know how to make them. I was going to make oat meal cookies but we don't have any oatmeal. So we have peanut butter and I can't find out how to make them though. I already tried going on google, yahoo search, and dogpile.

PEANUT BUTTER COOKIES

1/2 c. shortening or butter
1/2 c. brown sugar, packed
1/2 c. sugar
1/2 c. peanut butter, creamy or chunky
1 egg
1 tsp. vanilla extract
1 1/2 c. flour
1 tsp. baking soda
Pinch of salt

Cream together shortening, sugars, and peanut butter. Add egg and vanilla; mix well. Add flour, soda, and salt. Drop by spoonfuls on ungreased cookie sheets and flatten with a fork dipped in water. Bake at 375 degrees for 10-12 minutes.

SPRITZ COOKIES:

Decrease flour by 1/4 cup and add in 1/2 teaspoon baking powder Chill dough for 1 hour or longer. Load into cookie press and spritz into ungreased cookie sheets. Sprinkle with sugar. Bake at 350 degrees for 6-8 minutes.

Ingredients:


1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup margarine softened
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions:
Mix sugars, peanut butter, shortening, margarine, and egg. Stir in remaining ingredients. Cover and refrigerate at least 3 hours.

Heat oven to 375. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork dipped in flour. Bake until light brown, 9 to 10 minutes. Sprinkle with granulated sugar mixed with food coloring. Cool 2 minutes then remove from cookie sheet.

I prefer to buy the mix from the grocery store all you do is add oil, mix, and bake. This all-time favorite tastes great and is easy to make. Try using "natural" peanut butter (the kind that separates - stir it together first) or crunchy peanut butter in the recipe. This recipe makes about two dozen cookies.

6. Roll dough into 1-inch balls and place them a few inches apart on cookie sheets. (Image 4)

7. Butter the tines of a large fork and use it to press the cookies flat. Make a design of perpendicular lines with the fork. Re-butter the fork as necessary. You can also dip the buttered fork into granulated sugar before pressing; some of the sugar will then stick to the cookies. (Image 5)

8. Bake for 10 minutes or until just starting to brown around the edges.

9. Remove from the cookie sheet to cool. (Image 6) Do you have Joy of Cooking (a classic cookbook) in your house? Or maybe you can find the Joy recipe on line. That, in my experience, is the most amazing pb cookie recipe, and its easy and they always turn out great and everyone loves them. I prefer them with the "natural"-style peanut butter.
