I have switched to cooking stones. I love them for everything. I never get dark bottoms>read.the.quaran.they.don`t.aff...

Put a piece of parchment paper on the pan and put your cookie dough on that, and that should help lighten the bottoms. Some pans with dark surfaces may require you to lower the baking temperature by about 25 degrees to prevent very dark bottoms. SO YOU USE THE NON-STICK BUT ITS STILL DARK AT THE BOTTOM? WELL WHAT I USE IS EITHER BUTTER OR FLOUR IF YOU SPRINKLE SOME FLOUR ON THE SHEET BEFORE YOU PUT THE COOKIES THEN THEY WON'T STICK AND THEY WON'T BROWN... IF THEY ARE STILL BROWN THEN CHANCES ARE YOU ARE LEAVING THEM IN TO LONG USUALLY IF IT SAYS LEAVE IN 30 MIN. YOU SHOULD CHECK THEM AFTER 20 IF THEY ARE GOLDEN ON TOP THEN THEY'RE DONE... SOMETIMES PEOPLE HAVE GOOD OVENS AND OTHERS HAVE NOT SO GOOD OVENS. IT HAPPENED TO ME MY OVEN HEATS UP QUICK AND MY CAKES AND COOKIES ARE ALMOST BURNED. BUT IF YOU HAVE A NON-STICK PAN YOU MIGHT NOT NEED TO PUT ANYTHING ON THE PAN JUST PUT THE COOKIES AND CHECK THEM 10MIN BEFORE THE TIME IS UP.. Good LUCK LET ME KNOW HOW THEY COME OUT


use some Pam spray and you and when you read how many minutes to leave the cookies in there say if the directions say 15-20 minutes you'll leave them in there for 17 1/2 minutes.

Toll Houses? Debbie Fields says: turn the oven waaay low, like 320, and just watch them closely for maybe 10-12. They'll be evenly browned. I always use plain old parchment.
