Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

Depends a bit what you want to do with it later, but freezing and thawing it will probably make it mushy anyway, so you may as well cook it properly. If you want to keep it a long time, as with all fruit & veg, you should at least blanch it first (drop it into boiling water and cook it a little, stops processes of decomposition in the freezer). Freeze it in small portions, so you don't have to use it all at once!

As in all veges you have to blanche them first for 5 minutes then cool and freeze
Cut the stalks into chunks, then you'll need to blanch it. Blanching means to put the fruit or vegetable into a pot of boiling water for just a few seconds (to stop the ripening process), and then into a bowl of ice water (to stop the cooking process). Then place into freezer bags and store up to 6 months. This ensures your rhubarb will taste very fresh when you take it out of the freezer later on.
You could wrap it in plastic wrap and leave it whole or cut it in chunks and add the sugar called for in the recipe and put it inplastic bags.
we just cut it up and put on a cookie sheet spread out , when frozen put in freezer bag it won't stick so bad and come out as a clump
