Answers:
When you use sage, you could chop it but I prefer to just "bruise" it to get the essential oils out of it. To do this, I take the leaf or leaves, and take the back side of a knife (the non-sharp side) and beat the leaves until you start to smell sage strongly. I then take the leaves, put it in a cheesecloth, tie it off and put in whatever you are making (unless it is stuffing or the like, then chiffonade it). The cheesecloth makes it easy to get the leaves out when you are done.

Other Answers:
Let it dry, then crush it down as much as you can to resemble a powder. Good Luck!!!

you can chop it very small (that way your not eating big hunks of sage) or i like to stuff chicken with it or throw it in whole when boiling chicken. ?

You do not want to crush it down to a powder. Wash it in the sink like you would any fresh vegie then dice it up and add to your dish a few minutes before the dish is finished cooking.

Chop up a handful, saute it in a skillet with a stick of butter, when melted stir in your favorite pasta. Heat through and sprinkle with parmesian cheese..yum!
