A quick recipe I tried last week - I really tasted gr8; that's why I'm putting it up here.

Carrots (grated fine) - 2-3
Oil (of ur choice - go for butter or ghee if u'd prefer so) -1tbsp
Sweetened Condensed Milk - 1 can
Split cashewnuts - 7-8
Raisins - 7-8
Cardamom(powdered) 2-3

First fry the cashewnuts and raisins in oil and keep aside.
In the remaining oil, stir fry the carrots on medium flame, till the raw smell goes. Now reduce he flame and add the milk with continuous stirring till the mixture thickens. In the meanwhile drop in the raisins, cashew and the cardomom powder. Switch off the flame when the mixture is almost dry. (If u'd like to sweeten this further pls. stir in a tbsp of sugar while the mixture is still wet).

Serve it hot or cold.

Follow the basic recipe but add carrot gratings.
CARROT HALWA

1 lb carrots (2 cups grated carrots)
3 to 4 tablespoons ghee (or clarified butter), divided use
1 1/2 cups whole milk
1 cup sugar
cashew nuts, raisins, almonds, and pista (if required)

Peel the carrots. Grate the carrots preferably using a hand-held grater. If not, use a blender.

Pour 3 teaspoons of ghee in a heavy saucepan. Put the grated carrots into the pan and cook it for 3-4 minutes.

Add the milk and boil till it gets thick, stirring occasionally.

Once it starts thickening, stir continuously. Add sugar and cook further till it thickens. Stir on low heat till the mixture becomes soft or the ghee oozes out.*

Once it has reached the required level of consistency, fry some raisins and cashews in ghee, in a separate vessel.

Spread the halwa in a plate and decorate the raisins and cashews on the top.

Please note that it is better to use low heat to cook the recipe.
Ingredients
2 Lb carrots (grated)
1 cup sugar
3 tablespoon ghee or butter
1/2 cup condensed milk
3/4 cup Khoya (use Ricotta Cheese if Khoya is not available)

Garnish
1/4 cup cashews
2 tablespoon dates


Preparation
1 Cook carrot with ghee on medium heat for 15-20 minutes. Stir well while cooking.

2 Add the condensed milk, khoya, sugar and cook again in medium-low for 15-20 minutes.
3 Garnish with the cashews and dates and serve.
