Good milk makes good curd, where ever you are. The best quality curd recipe is actually homemade in India, i have eaten it all over the world, and come to that conclusion.
You'd need a culture, very good quality milk. Set it in proportion after warming the milk. But if you can get curd that can be reset then it is the best. A little curd, more if it is cold, Les if the weather is warm. slightly warmed milk mix well and hey presto it is set.
