Answers:
Just tell them, and be sure to express that you're not doing it out of disrespect for their beliefs and practices. Be able to give them solid reasons for why you want to be a vegetarian- If you're doing it for health reasons or for ethical reasons, be able to give them real facts. Also, be able to prove to them that you will be able to get all the nutrients you need, whether you contact your doctor for info on this or make up a sample meal plan. If they still have doubts, ask them to research it and present you reasons you shouldn't be a vegetarian. Finally, do NOT assume they will alter their cooking to suit your new vegetarian preferences. Let them know that you'll cook your meals, and if you can, buy the foods you'll be using in place of meat.
Other Answers:
Be nice about it. Don't shove ideas and beliefs down anyone's throat, even if they do it to you. Politely point out why you would like to do it, and that you would appreciate it if they would support you.
Educate yourself as much as you can. You can argue a lot easier if you know your facts, especially since most people don't. http://www.vrg.org/nutshell/nutshell.htm is a very good place to start.
Good luck :)
Be prepared to back up your stand with information. Don't preach about eating meat; rather tell them how you can stay healthy with alternative sources of protein. The more knowledgeable you are the healthier you will be without meat, and the better you will be able to convince people that care about you that you know what you’re doing and will stay healthy.
If they continue to argue with you then it’s a no-win situation, and you’ll just have to ask them to mind their business, and ask them to rest assured that you are taking steps to get a balanced diet.

You say "Hey Mom and Dad I know you are against it, but I am a vegetarian."
Just go ahead and follow your heart. Your parents may protest, but they can't force you. In the end, they will submit and realise it's what makes you happy, and that's what they'll realise they're not making you by forcing you to have meat.
Congrats on going veg. I myself am planning to become one. Just have to get the cravings off chicken.
Explain that they have tried to get you to eat certain things from the day you born. how are they going to get you to do it now? Tell them your experimenting and if your health sufferes you'll go back to meat.
