I make gourmet mayonnaise. I have no idea how to can it in order to keep it on the shelf. I tried boiling the mayonnaise jars, unfortunatelly it lost its consitency. Sometimes my family asks me to ship it to them and I have to pack it in dry ice. I want to be able to send it to my family without worrying that it will go bad.

Moondoe, this is something that stumps me. I'm sure mayo makers like Best Foods, etc, add in an additive to there mayos, but I wouldn't even know where to start with that. I belong to a great website for chefs, and I'd recommend you ask them. The website is http://www.cheftalk.com
