This is my absolute favourite dish to prepare. I've had it in restaurants, but I prefer the way I make it.
Butter Chicken
3/4" (2cm) piece of ginger, chopped
3 garlic cloves, chopped
1/2C (75g) blanched ground almonds
2/3C (150ml) thick, plain yogurt
1/2 TSP (5ml) chili powder
1/4 TSP (1.25ml) ground cloves
1/4 TSP (1.25ml) ground cinnamon
1TSP (5ml) garam masala
1/2TSP (2.5ml) ground cardamom (or 4 pods crushed)
14oz (400ml) tin chopped tomatoes
1 1/4TSP (6ml) salt
2.2lb (1kg) of skinless, boneless chicken thighs cut into 2" pieces
5 TBS (75ml) ghee
1 large onion, thinly sliced
6TBS (90ml) cilantroleaves, chopped
4TBS (60ml) heavy (whipping) cream
In a food processor, blend ginger and garlic. Add almonds. Combine paste with next 8 ingredients. Add chickenpieces and stir to coat. Cover and refrigerate for 2 hours or overnight.
Preheat oven to 350. heat ghee is karhai or deep, heavy frying pan. Add onoin and fry until softened and brown. Add chicken mixture and fry for 2 minutes. Fold in the fresh cilantro. Put mixture in shallow baking pan and pour in the cream and stir to blend.
Bake for 50 mins, covered. Remove cover and bake for 10 minutes more to brown top. Let rest 10 mins before serving.
Serves 6
