I have the small 8-inch kind, both green and yellow. Do you just sliced them and boil? Kind I fry them? If so, in vegetable oil? What are good spices?

Zucchini..yes... you can boil it, but it gets mushy.

You can quickly fry it in olive oil or butter or veg oil, any kind of fat you like..

Salt and pepper
parsley
oregano
thyme
sprinkle a little parm cheese
a tiny bit of hot pepper flakes... little

You can drizzle Italian salad dressing on them after you fry them a bit... but be care full. Over cooking them with turn them to mush, so you will have to test them with a fork or knife.. They don't take long to cook.

You can even steam them and season them anyway you like..

Zuchini is best fried in butter with onion and salt and pepper.

cut them in small slices add country crock salt and peper to taste and put them in the microwave for a couple of minutes or until tender. YUMMY I cook it like you would mashed potatoes. Peel and cut squash, boil until tender, drain, add milk and butter then mash together!


You can boil them, or steam them. My favorite for the yellow squash is to fry them. Coat them in a little flower and seasoning and fry them up. In vegetable or canola oil is fine. I just use salt and pepper and I love it.

I would chop them up and steam them until soft. This is the healthiest way.

2. stewed with onions and zuccini if you want (I hate this way)
2. You can also steam them which locks in the nutrients and they are much better for you, becuase you dont add the butter, oils etc..

Grilled! Slice according to how thick you like to eat it. Spray with cooking oil spray and grill. For added flavor sprinkle any spice that you like. Garlic, oregano, basil are our favorites. Then when almost done cooking to your preferred doneness put a pinch of parmesan cheese on each! Yummy and relatively healthy! Slice in rounds, then cooked in butter and garlic (with salt and pepper for seasoning). Once the squash pieces are tansparent, they're cooked.


The green ones are zucchini and the yellow ones are crookneck squash. Zucchini are wonderful fried, but not the small ones like you have (they'd take forever to cook, and you'd spend your time turning them over, etc.) I would suggest slicing them in half lengthwise, then slicing in half in the other direction (you'll end up with little half moon shaped slices). Put them in a steamer basket with a little bit of sliced or chopped onion, and let them steam. When they're finished, salt and pepper them and add a little butter. Yum! However, if you ever DO want to fry them, here's how: Slice your zucchini about 1/2 inch thick. Salt and pepper both sides to taste, and dredge in flour on both sides. In a large skillet, preheat vegetable oil or bacon grease until it's pretty hot, but not smoking. As for how much...not a whole lot. You don't wnat to deep fry them, but you also don't want them to stick! Drop the slices in, being careful not to burn yourself. When they're golden brown on one side, flip them over until they're done on the other side. Drain slices on papertowel and eat.

squash casserole is really good, you can bread and fry them which is awesome for zuccini, or you can kind of sautee them in a frying pan with onions and salt and pepper-- i love that! yumm

i do mine on the grill,,, cut up squash and onions,, put in reynolds wrap , add butter, salt and pepper or Mrs. dash seasoning,, wrap real tight with more aluminum foil, but leave a pocket open at top so you can check the squash for softness,, about a half hour if you have a small pile, about an hour if you have more than 8 squash,,, just keep checking for softness,,,, so yummy!!!!! go to allrecipes.com
