If you want the egg bottoms to stay tender white, use a lower heat setting and only a teaspoon of water and leave the cover on longer. You'll have to check to see if the egg is done to your satisfaction as I don't remember how many minutes it takes with a lower heat setting.
Another interesting way of frying eggs is to drop them into a deep-fat fryer at 325 degrees and poach them in oil.
