I use flour in my batter but mix it with a hefty dose of cornmeal. Some people don't like it but my husband loves it, especially when I mix all the spices into the batter pretty heavy. We like spicy chicken so I use a lot of black, white and cayenne peppers. Use Kosher salt for a better salt flavor. Fry slowly (use a less than medium heat but not too low) and cook it a bit longer. Turn once or twice with tongs (don't pierce the meat or the juices will fry out of it).

Remember, anything with paprika should be avoided when frying. Paprika burns very easily and it makes the chicken undercook and the batter overcook. Cook in peanut oil for the best chicken ever!

I don't normally use an egg wash before I batter. I just wash the chicken under water and roll in the batter. Then I let it sit for about 5 min and roll it again. Then I fry it.

when i deep fry chicken/fish i normally dip in flour then beaten egg then seasoned flour it stays on that way for me - hope that helps

All good ideas, but the most important one is, make sure your oil is hot enough. If the oil is hot enough it will stay put.

And make sure the oil is really hot.
