How much the pancakes will stick probably depends on the dough, on the number of pancakes stacked, on the oil used for frying, and on how long one leaves the pancakes stacked.

Here's what I do to make the pancake dough:

* I make pancakes from spelt flour, has more fiber than regular flour. It takes about two heaped tablespoons of spelt flour for one pancake.
* Per pancake I use some soy lecithin with the flour, may be 1/8 of a teaspoon per pancake.
* Mix and add water to make the dough thicker or thinner as liked.
* I use olive oil for frying the pancakes, then I stack them. I never had a problem with sticking pancakes.

Tips
* Too much lecithin makes the dough to soft and the pancakes break easily. Too little makes them stick to the pan.
* A little brown sugar makes them more crisp, may be 1/4 teaspoon per pancake.
* Salt can be added the pancake dough to taste.
* For fruit fillings I add cinnamon to the pancake dough.

Fillings
For a filling of one half of the pancakes I use fresh fruit salad, bananas with brown sugar and raisins or dates, left over vegetables, noodle salad or rice salad, or just a green salad with tomatoes and zucchini. I fold the other half over the filling.

Garnish
Any food tastes better when it looks nice. I place a piece of fruit, ice cream or soy ice cream on the folded pancake filled with fruit fillings, and may add some chocolate or similar sauce;
some parsley looks nice on the pancakes with vegetable fillings, or a spinach leaf cut in strips, or a basil leaf for the vegetable, noodle or rice filled pancakes.

Leftovers
Left over pancakes are cut in strips and kept in the refrigerator, in a container. I use them instead of noodles in the next soup.

Try spraying a little "fake" butter on the tops and bottoms of them. Something like I can't believe it's not butter or Parkay spray.
