Use lots of baking cocoa. If your recipe has your cake looking less dark, use 1 1/2 times the cocoa powder or baking squares. It gives it a better flavor and color.

Comes from the cocoa powder. It depends on your recipe. I use the one on the back of the Hershey's cocoa box that needs like 1/3 cup or more of cocoa. Some recipes use less and don't end up so dark.


Use the best dark chocolate you can afford. Giradelli or Lindt are good brands that aren't insanely priced. You can use cocoa powder too, but again, the stuff that's a couple bucks on the grocery shelf will not give you the flavor that a high quality chocolate can. If you can't afford it, the chocolate bars in the baking aisle that are pure or almost pure cocoa (70-80% are good) will work well without being too costly.
