I'd like a good recipe for a fancy Dinner using fresh Salmon or fresh Cod.
Answers:
The Knorr product isn't bad. I add extra FRESH lemon juice (more than what is called for) to it to perk it up a bit, and usually garnish w/ fresh lemon zest as well.
Here's how I make mine, which is about as quick as Knorr.
In a heavy, small saucepan, whisk together 3 egg yolks, a pinch of salt, and 1/3 cup fresh squeezed lemon juice. Turn on medium-low heat, and melt 3/4 of a stick of butter slowly, stirring/whisking constantly. Cut another 3/4 stick of butter which has been cut into tablespoon-size chunks. Add one chunk at a time, whisking, allowing it to melt slowly. Continue this until all butter chunks are incorporated and melted in. Sauce is ready! Takes only about 7-9 min. or so.
Other Answers:
Knorr actually has a package mix for Hollandaise sauce... it is just milk and butter and very easy, but also very good. I use it often for Eggs Benedict.
suggest using knorrs mix for hollandaise-excellent product-for salmon add lemon juice and dill to hollandaise-recipe for cod-first saute off some pepper and onion strips lightly-put cod in oven proof dish top with a thin layer of feta cheese the pepper and onion strips next then a light layer of bread crumbs splash on a little lemon juice then add a hint of cooking sherry bake for 15-20 minutes at 350 there done-use of red green and yellow peppers makes for good color on the plate- enjoy
