I purchased the device for grilling vegetables, but there must be a process for grilling vegetables on my charcoal grill other than just putting them on the tray. What is the process?

Well, I think the tray just helps keep the veggies from falling through the grill "slots," if you will. You could (I know I can't spell this, but I'm gonna try) shishka-bob them (did you understand that one? lol), you know, stick them through with a stick. I also think using some heavy duty aluminum foil can be used to grill those veggies. Hope that helped somewhat! ^_^

I have been grilling veggies this summer w/o any special device. As long as the pieces are large, like whole portobello mushrooms or thick slices of eggplant, etc., they are fine right on the grill just like a burger or what have you, although they ordinarily cook much more quickly. If you have smaller pieces, the skewers (a la shish-ka-bob) are great, but be sure to soak them in water for 30 minutes before putting them on the grill or they will burn right up.
To prep the veggies: brush with olive oil and season as desired. I love the McCormick's grinders, esp. Steakhouse Seasoning.

Slice the veg about 1/4 inch thick, zucchini, eggplant. Broccoli make a good size spear w/ a Base not to thick. Asparagus trim the bottoms. Season with salt and pepper 2 parts olive oil and 1 part balsamic vinegar I also use some grill seasoning like Mc cormicks Montreal seasoning. Use direct high heat on the BBQ, drain off excess olive oil so you don't flare up, cook a few minutes on each side, veg should be tender.
chopped them up! marinate in italian dressing for 1-2 hours. take heavy duty aluminum foil double it. take a spoon with hoels and remove the vegetables from the dressing and place on the foil. make the foil like a bowl. seal. cook to the side of the fire (not close) for about 30 minutes depending how hot your fire is. cloes the grill!
