dont use fresh eggs. put the eggs in the water, bring them to a boil, shut the burner off cover the pan and set a timer for 20 minutes. when the timer goes off immeditely pour the hot water off and rinse the eggs in cold water over and over until they are cool.......peel them under running water. the yolks will be perfect. if you want your yolks to be perfectly centered for nice deviled eggs, set the eggs on their sides on the carton overnight before boiling them
